MAP - Gas Flushing
GAS FLUSHING - create product protection with M.A.P. packaging - The injection of neutral gas (a gas which doesn't react with the product and/or food gas), is the second stage of the packaging cycle in M.A.P. packaging. Gas flushing and M.A.P. packaging benefits - stabilisation of the bacteriological flora, longer shelf life, protection of the structure of fragile products, no crushing, careful and attractive presentation [like the balloon bag for vegetables]. Essential M.A.P. gases and gas mixtures - The gas used most often in gas flushing is a mix of nitrogen (N2), carbon dioxide (CO2) and potentially oxygen (O2). Argon (Ar) is also increasingly offered. Each gas has a clearly defined main role - Nitrogen (N2) and Argon (Ar) eliminate traces of air and humidity, Carbon dioxide (CO2) prevents the development of bacteria and Oxygen (O2) maintains colour of red or reddish meats.
